Scallion salad with sesame
Delight in the crunch of fresh scallions combined with the nutty aroma of sesame seeds. This salad is a perfect balance of flavors and textures.
Ingredients:
- 1 bunch scallions, cut into 4"-long pieces, very thinly sliced lengthwise
- 2 tsp. gochugaru (coarse Korean red pepper powder)
- 2 tsp. toasted sesame oil
- 2 tsp. toasted sesame seeds
- 2 tsp. unseasoned rice vinegar
- Kosher salt
Instructions:
- Submerge 1 bunch of scallions, which have been sliced thinly lengthwise into 4"-long pieces, in a bowl of ice water. Let them soak for at least 10 minutes or up to 1 hour. After soaking, drain the scallions and gently pat them dry using paper towels.
- Move the scallions to another clean medium bowl. Add 2 tsp. of gochugaru, 2 tsp. of toasted sesame oil, and 2 tsp. of toasted sesame seeds. Toss the ingredients gently to mix well.
- Just before serving, pour in 2 tsp. of unseasoned rice vinegar and season with kosher salt. Mix all the ingredients together.
- If preparing in advance, you can make the scallion salad (without vinegar and salt) 1 hour ahead. Cover it and store in the refrigerator.
