Scallion salad

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 1/2 medium onion, sliced
  • 2 cloves garlic, minced or crushed
  • 230g mushrooms, sliced
  • 5 to 6 green onions, sliced into 1-inch pieces
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sesame seed oil
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher or sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions:

  1. Warm up a big frying pan on medium-high heat. Put in the oil and then mix in the onions. Sauté for roughly 2 minutes or until the onions become tender.Incorporate the garlic, mushrooms, and green onions and stir occasionally until the mushrooms turn slightly brown and soft, for about 3 to 5 minutes.Mix in the soy sauce, sesame seed oil, and crushed red pepper flakes. Keep cooking until everything is heated through.Adjust the taste with salt and pepper if preferred.
