Savory peach and cucumber salad

Ingredients:

  • cup raw pumpkin seeds
  • tablespoon plus ¼ cup olive oil
  • Kosher salt
  • cardamom pod
  • whole clove
  • teaspoon coriander seeds
  • teaspoon cumin seeds
  • serrano chile, finely grated
  • garlic clove, finely grated
  • tablespoons finely chopped parsley
  • tablespoons finely chopped cilantro, plus leaves with tender stems for serving
  • tablespoons (or more) fresh lemon juice
  • medium Persian cucumbers, cut into 1-inch pieces
  • medium yellow peaches, cut into 1–1½-inch pieces
  • avocado, cut into 1-inch pieces
  • teaspoon toasted sesame seeds
  • A spice mill or mortar and pestle

Instructions:

  1. Preheat the oven at 350°. Place pumpkin seeds on a baking sheet with edges, stir them in between, and bake until they turn golden brown and slightly puffed, which takes about 5 to 7 minutes. Let them cool down. Put them in a small bowl, add 1 tablespoon of oil, sprinkle some salt, and mix well.
  2. While the pumpkin seeds are baking, place cardamom, clove, coriander, and cumin in a small dry pan over medium heat. Stir occasionally until they release fragrance, which usually takes around 2 minutes. Remove the seeds from the cardamom pod, discard the pod, finely grind all the seeds along with the other spices in a spice grinder or using a mortar and pestle. Combine this mixture in a large bowl with chile, garlic, parsley, chopped cilantro, lemon juice, and the remaining 1/4 cup of oil. Add some salt for seasoning. Mix in the cucumber and let it sit for 5 minutes.
  3. Now, add peaches, avocado, and half of the toasted pumpkin seeds to the cucumber mixture. Season generously with salt, toss well to combine. Taste and adjust the seasoning with more salt and/or lemon juice as needed.
  4. Serve the dish garnished with sesame seeds, cilantro leaves, and the remaining pumpkin seeds.
