Sausage salad

Delight your taste buds with this flavorful sausage salad. Perfect blend of savory sausage, fresh greens, and zesty dressing. A must-try for salad lovers!

Ingredients:

  • 1 (12-ounce) package sweet Chinese sausage
  • 2 medium red onions, wide around the middle
  • 5 pickling cucumbers or Kirbies, with skins
  • Inner leaves from 1 bunch celery, washed and roughly chopped (about 1/2 cup)
  • 1 bunch cilantro, leaves only
  • 4 to 6 serrano chiles, stems removed and thinly sliced, diagonally
  • 1 tablespoon chopped kaffir lime leaves, or 1 teaspoon grated lime zest
  • 2 teaspoons pureed garlic
  • 1/4 cup palm sugar or dark brown sugar
  • 1/2 cup fresh lime juice
  • 1/2 cup fish sauce

Instructions:

  1. Heat broiler. Arrange sausages on a baking sheet and broil until they are browned on all sides, approximately 5 minutes per side. Allow them to cool.
  2. Prepare onion cups by removing the root and top ends, peeling the onion, and cutting it into halves. Gently separate the layers to form cups, reserving 12 of the largest ones. Cut the remaining onion into thin strips for the salad.
  3. Cut the cucumbers in half lengthwise and then slice them, along with the sausages, diagonally.
  4. In a medium bowl, mix together the sausages, cucumbers, onion strips, celery leaves, and cilantro. In a separate bowl, whisk the serrano chiles, lime leaves, garlic, palm or brown sugar, lime juice, and fish sauce. Pour this dressing over the salad and mix well.
  5. For serving, place the onion cups with the open side up on each plate. Fill the cups with the salad mixture and serve.
