Sausage potato salad

Ingredients:
- 450g red potatoes
- 2 teaspoons extra-virgin olive oil
- 230g kielbasa, sliced into 1/4-inch-thick rounds
- 1/2 cup finely chopped celery
- 1/4 cup thinly sliced green onions
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons extra-virgin olive oil
Instructions:
- Start by heating a generous amount of water in a big pot until it reaches a boiling point. Carefully introduce the potatoes into the pot and let them cook for approximately 25 minutes or until they become tender. Once ready, drain the water and allow the potatoes to cool down. Proceed by cutting the potatoes into quarters and transferring them into a spacious bowl.
- Next, take a large skillet and place it over medium-high heat. Pour the 2 teaspoons of oil into the skillet and proceed to brown the kielbasa. Once done, place the browned kielbasa on a plate lined with paper towels to remove excess oil. Add the kielbasa into the bowl with the potatoes, alongside the celery and green onions.
- To create the dressing, combine vinegar, mustard, minced garlic, salt, and pepper in a small bowl. Gradually pour in the oil while whisking the mixture. Add the prepared dressing along with celery and green onions to the bowl containing the potato mixture. Gently mix everything together. This dish can be served either warm or at room temperature.
