Sausage potato salad

Ingredients:
- The salad
- 450g small Yukon Gold potatoes
- 1 teaspoon olive oil
- 230g fully cooked cracked pepper smoked sausage, sliced into 1/4-inch rounds
- 1 shallot, thinly sliced
- 1 celery stalk, chopped fine
- 2 tablespoons fresh thyme leaves
- Country Dijon Mustard Vinaigrette
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon style country mustard
- 1 large clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 6 tablespoons good olive oil
Instructions:
- Boil a large pot of water on medium-high heat for the Salad. Add the potatoes and boil for 10-15 minutes for small ones, adjusting time for larger ones. Drain and allow to cool. Quarter the potatoes if they are large and transfer to a bowl.
- Combine celery, shallot, and fresh thyme leaves in a separate bowl and set aside.
- Meanwhile, heat 1 teaspoon of oil in a large skillet over medium-high heat. Saute the sausage slices until browned. Place them on a paper towel-lined plate to absorb excess fat. Add the sausages to the bowl containing the potatoes, shallot, celery, and thyme leaves.
- To make the Dressing, mix red wine vinegar, country mustard, garlic, salt, and pepper in a small jar with a lid. Add 6 tablespoons of olive oil. Close the lid and shake until well mixed. Pour half of the vinaigrette over the potato salad. Taste and adjust the seasoning as needed. Garnish with additional fresh thyme leaves. Serve the salad warm or at room temperature.
