Sausage, apple & sage roll

Indulge in the savory combination of sausage, crisp apple, and aromatic sage, all rolled up in this delicious and flavorful dish. Perfect for a gourmet culinary experience.

Ingredients:

  • 1 tbsp sunflower oil
  • 1 medium onion, finely chopped
  • 1 small eating apple, peeled, cored and cut into 1.5cm chunks
  • 3 sheets filo pastry
  • 454g pack extra-lean pork sausages
  • 1 tbsp finely chopped sage
  • bag of mixed salad leaves, to serve

Instructions:

  1. Preheat the oven to 200C/180C fan/gas 6. Prepare a large baking tray by lining it with baking parchment. In a small non-stick saucepan, warm 1 tsp of oil and cook the onion and apple over low heat for 6-8 mins, stirring occasionally, until they are tender and slightly golden. Let it sit for 5 mins to cool down.
  2. Lay down one pastry sheet on a work surface, with the shorter side facing you, and lightly coat it with oil. Place another sheet on top, slightly shifted about 6cm to the right, and brush it with a bit more oil. Add the final sheet, shifting it another 6cm to the right. The pastry should form a rectangle measuring approximately 40 x 45cm.
  3. Remove the sausagemeat from its casing and put it in a large bowl. Mix in the cooked onion, apple, and sage. Shape the pork mixture into a large sausage and position it on the pastry, approximately 8cm away from one short end and 8cm from each side.
  4. Fold the bottom of the pastry over the filling, followed by the sides. Roll the pastry from the bottom, being gentle but ensuring the filling is enclosed. Transfer the roll onto the baking tray and brush the top with the remaining oil. Bake for about 30 mins or until the filling is fully cooked and the pastry is nicely golden and crisp. Serve with a side of mixed salad leaves.
