Santa fe quinoa salad

Ingredients:
- 3/4 cup quinoa (about 140g)
- 1 1/2 cups water
- Kosher salt
- 1 teaspoon cumin seeds
- 2 tablespoons fresh lime juice
- 6 tablespoons vegetable oil
- Freshly ground pepper
- One 15-ounce can black beans, rinsed
- 1 small red bell pepper, finely diced
- 1/2 cup finely chopped cilantro
- One 3-ounce jar cocktail onions, drained and finely chopped
Instructions:
- Combine quinoa, water, and a pinch of salt in a medium saucepan. Bring to a boil, then reduce the heat and simmer until the water is absorbed, approximately 15 minutes. Spread out the cooked quinoa on a baking sheet and refrigerate for around 20 minutes.
- While the quinoa is cooling, toast cumin seeds in a small skillet over high heat, shaking the pan occasionally until they become fragrant, about 2 minutes. Transfer the seeds to a blender and add lime juice and oil. Blend the mixture and season with salt and pepper.
- In a bowl, mix together the black beans, bell pepper, cilantro, and cocktail onions. Add the dressing from the blender and the chilled quinoa. Season with salt and pepper before serving.
