Sandy's potato salad

Delight in the delectable blend of tender potatoes, crisp vegetables, and creamy dressing in this classic potato salad recipe. Perfect for any occasion!

Ingredients:

  • 2270g white boiling potatoes, cooked, diced and cooled
  • 4 to 5 hardboiled eggs, finely chopped
  • 1 cup chopped celery
  • 1/2 cup sweet pickle relish
  • 1/2 cup finely chopped onion
  • 2 cups mayonnaise
  • 2 tablespoons brown mustard
  • 2 tablespoons sugar
  • Salt and pepper

Instructions:

  1. Combine the potatoes, eggs, celery, relish, and onions in a spacious bowl. 
  2. In a separate small bowl, blend the mayonnaise, mustard, and sugar. Gradually incorporate the mayonnaise mixture into the potatoes, ensuring even distribution without adding it all at once, until the mixture is moist. Adjust the amount of the 2 cups of the mayonnaise mixture as needed (this will vary based on the potatoes). Season with salt and pepper to your preference.
