Sam's spring fattoush salad

Indulge in the fresh flavors of Sam's vibrant spring fattoush salad. Crisp vegetables, aromatic herbs, and zesty dressing make every bite a culinary delight. A perfect balance of textures and tastes awaits!

Ingredients:

  • 2 pieces lavash bread
  • 1/4 cup plus 3 tablespoons extra-virgin olive oil
  • Kosher salt
  • Aleppo pepper (optional)
  • 1/4 cup lemon juice
  • 1 clove garlic, peeled and minced
  • 5 Persian, Armenian, or Japanese cucumbers, thinly sliced
  • 5 radishes, thinly sliced
  • 3 green onions, thinly sliced
  • 1 cup dill fronds
  • 1 cup mint leaves
  • 1/2 cup feta, preferably sheep’s milk

Instructions:

  1. Preheat your oven to 350°F. Spread 3 tablespoons of olive oil over both sides of the lavash. Place the lavash on a baking sheet, sprinkle salt and Aleppo pepper if desired. Put it in the oven and bake until it turns golden and crispy, typically around 8 to 10 minutes. Once done, take it out and let it cool down.
  2. Mix lemon juice, garlic, and a good amount of salt in a small bowl. Gradually whisk in the remaining 1/4 cup of olive oil until everything combines well.
  3. Take a large salad bowl and mix cucumbers, radishes, green onions, dill, and mint in it. Pour half of the prepared dressing over the mixture and gently mix with your hands to coat everything. Break the lavash into small pieces and add them to the bowl along with the feta cheese. Pour the remaining dressing on top and mix everything carefully with your hands. Adjust the seasoning with more salt and Aleppo pepper if needed, then serve immediately.
