Ingredients:
- 6 cups chopped watermelon (cut into about 1-inch pieces)
- 3 /4 cup red wine vinegar
- Kosher salt and freshly ground black pepper
- 2 medium cucumbers, chopped into 1-inch pieces
- 1/2 cup olive oil
- 1 teaspoon lime zest and 1 tablespoon lime juice
- 1 teaspoon orange zest and 1 tablespoon orange juice
- 1 cup packed fresh basil leaves
- 110g French feta, crumbled
Instructions:
- Place the diced watermelon in a spacious container and refrigerate for 1 hour or overnight for best results.
- While the watermelon chills, prepare the quick-pickled cucumbers: Mix together 1/2 cup of red wine vinegar, 1 teaspoon of salt, and freshly ground pepper to your liking in a moderate-sized bowl. Stir the mixture until the salt completely dissolves. Add the chopped cucumbers and let them marinate for 1 hour, stirring occasionally.
- For the vinaigrette: Mix the olive oil, lime zest, lime juice, orange zest, orange juice, the remaining 1/4 cup of red wine vinegar, 1/2 teaspoon of salt, and freshly ground black pepper to your liking in a small bowl. Whisk the ingredients together until well blended.
- To put everything together: Combine the chilled watermelon, pickled cucumbers, basil, feta cheese, and dressing in a serving bowl. Toss the ingredients together until evenly coated. Season with salt and pepper to your liking. Refrigerate for at least 30 minutes before serving.
