Salsa salad

Refreshing salsa salad recipe perfect for a quick and zesty meal. Packed with vibrant flavors of fresh veggies, herbs, and a tangy dressing. Ready in minutes!

Ingredients:

  • 1 cup finely chopped onion
  • 1 cup finely chopped tomatoes
  • 1 cup finely chopped red, yellow and green bell peppers
  • 1/2 cup finely chopped cucumber
  • 1/2 cup yellow sweet corn kernels (fresh or frozen)
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons lemon juice
  • 1 teaspoon sugar
  • 1/4 cup water
  • 1 teaspoon white vinegar

Instructions:

  1. Heat up a non-stick skillet on medium-high heat. Add corn and water, then cover the skillet with a lid. Let it steam for around 3-5 minutes or until the corn is soft. Remove any extra water, let it cool, and set it aside.
  2. Combine diced onion, tomatoes, bell pepper, cucumber, and the cooked corn in a large salad bowl. Season the salad with salt, black pepper, sugar, lemon juice, and white vinegar. Mix thoroughly.
  3. Enjoy this dish as a side salad or as a snack with nachos.
