Salsa salad

Ingredients:
- 1 cup finely chopped onion
- 1 cup finely chopped tomatoes
- 1 cup finely chopped red, yellow and green bell peppers
- 1/2 cup finely chopped cucumber
- 1/2 cup yellow sweet corn kernels (fresh or frozen)
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons lemon juice
- 1 teaspoon sugar
- 1/4 cup water
- 1 teaspoon white vinegar
Instructions:
- Heat up a non-stick skillet on medium-high heat. Add corn and water, then cover the skillet with a lid. Let it steam for around 3-5 minutes or until the corn is soft. Remove any extra water, let it cool, and set it aside.
- Combine diced onion, tomatoes, bell pepper, cucumber, and the cooked corn in a large salad bowl. Season the salad with salt, black pepper, sugar, lemon juice, and white vinegar. Mix thoroughly.
- Enjoy this dish as a side salad or as a snack with nachos.
