Salpacio salad

Ingredients:

  • 3 (8-ounce) boneless skinless, chicken breasts
  • 2 red onions, peeled and cut into 1/4-inch thick rings
  • Olive oil
  • Salt and freshly ground black pepper
  • 3 carrots, peeled and shredded
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup thinly sliced scallions
  • 2 cups good quality mayonnaise
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons white wine vinegar
  • 3 cloves garlic, chopped
  • 2 tablespoons Spanish paprika

Instructions:

  1. Preheat the grill until it is very hot. Coat the chicken and onions with oil, salt, and pepper on both sides. Cook the chicken on the grill for about 4 minutes on each side until it develops a slight char and is fully cooked. Place the chicken on a plate, cover it loosely with foil, and let it sit for 5 minutes before cutting it into thin slices. Grill the onions for 3 to 4 minutes on each side until they have a slight char and are fully cooked. In a large bowl, combine the sliced chicken, grilled onions, carrots, parsley, and scallions.
  2. In a food processor, combine mayonnaise, broth, vinegar, garlic, paprika, salt, and pepper until it forms a smooth mixture. Pour this mayonnaise mixture over the chicken and gently mix everything together. Transfer this mixture to a serving platter, top it with vegetable chip sticks, and serve.
