Salmon with vodka sauce and parsley salad

Ingredients:
- 1 medium shallot, thinly sliced
- 3 tablespoons fresh lime juice
- 3 1/2 tablespoons canola oil
- Kosher salt and freshly ground pepper
- Four 6-ounce skin-on wild salmon fillets
- 1 garlic clove, minced
- 1/3 cup vodka
- 1 1/2 cups flat-leaf parsley leaves
- 1 1/2 long red chiles, seeded and sliced
Instructions:
- Mix together the shallot and lime juice in a bowl and allow it to sit for 10 minutes. Stir in 3 tablespoons of the oil and season with salt and pepper.
- Heat the leftover 1/2 tablespoon of oil in a nonstick pan. Season the salmon with salt and pepper and cook it, with the skin side down, over medium-high heat until it turns crispy, about 6 minutes. Turn the salmon and continue cooking until it is just cooked through, about 4 minutes more; then transfer it to plates.
- Remove all but 1 1/2 teaspoons of the oil in the pan. Add the minced garlic and cook for half a minute. Add the vodka and let it simmer until it reduces by half, around 1 minute. Combine the parsley and chiles with the shallot mixture. Serve the salmon along with the vodka sauce and parsley salad.
