Salad with warm goat cheese on toasted baguette
Savor the delightful combination of warm goat cheese atop crispy toasted baguette slices in this refreshing salad. Perfect for a light and flavorful meal!
Ingredients:
- 4 large handfuls of salad greens
- 1 cup cherry or grape tomatoes, cut in half
- 8 slices French baguette, 3/4" thick
- 8 slices of aged goat cheese, or other cheese, about 1/3" thick
- olive oil
- 2 tablespoons finely minced fresh basil
- 1 tablespoon Dijon mustard
- 3 tablespoons champagne vinegar (or white wine vinegar)
- 1/3 cup olive oil
- salt and pepper
Instructions:
- Prepare the dressing by combining the basil, mustard, vinegar, and olive oil together. Add salt and pepper to taste.
- Coat each piece of baguette with olive oil. Top each piece with a round or slice of goat cheese. Broil until the cheese is softened and slightly melted, for approximately 2-3 minutes.
- Mix the salad greens with the tomatoes. Spoon over some of the basil dressing (you might not need all of it) and mix well. Serve the salad with 2 portions of the hot cheese baguette per serving.
