Salad with warm goat cheese on toasted baguette

Savor the delightful combination of warm goat cheese atop crispy toasted baguette slices in this refreshing salad. Perfect for a light and flavorful meal!

Ingredients:

  • 4 large handfuls of salad greens
  • 1 cup cherry or grape tomatoes, cut in half
  • 8 slices French baguette, 3/4" thick
  • 8 slices of aged goat cheese, or other cheese, about 1/3" thick
  • olive oil
  • 2 tablespoons finely minced fresh basil
  • 1 tablespoon Dijon mustard
  • 3 tablespoons champagne vinegar (or white wine vinegar)
  • 1/3 cup olive oil
  • salt and pepper

Instructions:

  1. Prepare the dressing by combining the basil, mustard, vinegar, and olive oil together. Add salt and pepper to taste.
  2. Coat each piece of baguette with olive oil. Top each piece with a round or slice of goat cheese. Broil until the cheese is softened and slightly melted, for approximately 2-3 minutes.
  3. Mix the salad greens with the tomatoes. Spoon over some of the basil dressing (you might not need all of it) and mix well. Serve the salad with 2 portions of the hot cheese baguette per serving.
