Salad with chicken and crispy farro

Ingredients:
- 1 cup cooked farro, patted dry
- 6 tablespoons olive oil, divided
- ½ teaspoon kosher salt, divided
- 450g fresh asparagus, trimmed
- ¼ teaspoon freshly ground black pepper, divided
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1 tablespoon honey
- 3 cups baby arugula
- 3 cups shredded cooked chicken, such as rotisserie (from 1 chicken)
- ½ cup thinly sliced radishes (from 1 bunch)
Instructions:
- Heat broiler with rack positioned 5 inches away from the heat source. Combine farro, 1 tablespoon of oil, and a pinch of salt on a large baking sheet with raised edges. Broil the farro, stirring halfway, until it reaches a crunchy and chewy consistency, approximately 5 minutes. Transfer the farro to a generously sized plate lined with a kitchen towel. Allow it to cool for 5 to 10 minutes.
- Mix asparagus, 1 tablespoon of oil, and a pinch each of salt and pepper on the same baking sheet. Broil until the asparagus is tender-crisp, around 4 minutes. Cut the asparagus into 1-inch segments.
- Whisk together lemon juice, honey, and the remaining 1/4 cup of oil in a spacious bowl until well blended. Combine arugula, chicken, radishes, asparagus, and the remaining 1/4 teaspoon of salt and a pinch of pepper; gently toss to coat. Present the salad garnished with the crispy farro on top.
