Salad with buttermilk dressing

Ingredients:

  • 8 slices bacon
  • half baguette (230g), sliced into 3/4 inch cubes about 4 cups
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 1/3 cup buttermilk
  • 3 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 green onion, trimmed and thinly sliced
  • 450g romaine hearts, coarsely chopped (or other salad greens)
  • 1 pint cherry tomatoes, halved

Instructions:

  1. Preheat your oven to 190 °C. Place the bacon in a single layer on half of a baking sheet with raised edges. On the remaining half of the baking sheet, combine the bread cubes and mix them with the olive oil. Bake in the oven for about 15 minutes, remember to stir the bread cubes halfway through baking. The bacon should be crunchy and the bread cubes should be golden. Break the bacon into large chunks.
  2. Combine buttermilk, mayonnaise, vinegar, and green onions in a large bowl. Season the mixture with salt and pepper. Add lettuce, tomatoes, bacon, and croutons to the bowl; gently mix everything with the dressing. Serve immediately.
