Ingredients:
- 3 pieces Large Eggplant
- 1 cup Green Beans
- 1 cup Riced Cauliflower
- 3 pieces Tomatoes Quartered
- 4 Eggs
- 2 tablespoons Sliced Green Onions
- 1/4 cup Garlic Oil
- 4 cups Salad Greens
- 1/2 cup Sesame Tamari Dressing
Instructions:
- Preheat the oven to 180 °C. Spread out the eggplant and green beans on a baking sheet and season with 2 tablespoons of garlic-infused oil, salt, and pepper. On another baking sheet, do the same with the riced cauliflower and the remaining garlic oil, salt, and pepper.
- Place the trays in the oven and set a timer for 15 minutes. Remove the green beans when they are cooked and transfer them to a serving platter. Flip the eggplant slices and stir the cauliflower rice. Continue baking for another 15 minutes until the eggplant and cauliflower are nicely browned.
- Meanwhile, bring a pot of water to a boil. Once boiling, carefully add the eggs and cook for 6 minutes. Transfer the eggs to a bowl of ice water to cool. Peel the eggs and set them aside with the green beans.
- To assemble, place Asian Greens in a bowl and top with cauliflower rice. Arrange the eggplant, green beans, tomatoes, and boiled egg on top. Garnish with sliced green onions and serve with Sesame Tamari Dressing.
