Salad shirazi

Ingredients:

  • 3 Persian cucumbers (small, seedless)
  • 1 big tomato
  • 1 small red onion
  • 1 tablespoon finely chopped parsely (optional)
  • 6 tablespoons freshly squeezed lemon or lime juice
  • 1 teaspoon dried mint
  • olive oil, salt and pepper to taste

Instructions:

  1. Cut the cucumbers, tomato, and onion into small pieces, aiming for a size of about 1/4" or at most 1/2" - ensure uniform dicing. Aim for a ratio of 1 part cucumber, 1 part tomato, and 1/3 part onion. For instance, you could use 1 cup each of cucumber and tomato, and 1/3 cup of onion.
  2. Combine the diced vegetables in a bowl, along with finely chopped parsley (if desired), crushed dried mint, freshly squeezed lemon juice (use a generous amount), olive oil, salt, and pepper. Stir thoroughly to combine all ingredients well.
  3. Refrigerate the salad for 30 minutes to an hour to let the flavors meld together. It is recommended to serve the salad soon after making it, as extended storage may cause the lemon and other juices to become too tart.
