Salad of lamb noodles and peanuts
Delight in a fusion of flavors with this tasty salad of tender lamb, hearty noodles, and crunchy peanuts. Perfect balance of savory and nutty notes.
Ingredients:
- 180g dry cellophane noodles
- 1 tablespoon chili oil
- 1 clove garlic, chopped
- 450g tender lamb strips
- 140g snow peas, shredded
- 1/2 red capsicum, sliced
- 3 tablespoons soy sauce
- 2 tablespoons sweet chili sauce
- 1/4 cup coriander leaves
- 1/2 cup roasted unsalted peanuts, roughly chopped
Instructions:
- Place glass noodles in a bowl and pour boiling water over them. Let them sit for 4 minutes or until they soften; then, drain them. Warm up the spicy oil in a wok or skillet over high heat. Put in the minced garlic and cook for half a minute. Introduce the ground lamb and stir-fry for 3 minutes or until it browns. Toss in the sugar snap peas and bell pepper and stir-fry for another 2 minutes. Next, pour in the soy sauce and tangy sweet chili sauce before taking the wok off the heat. Mix the stir-fry with the noodles, cilantro leaves, and peanuts. Transfer to plates and garnish with lime wedges before serving.
