Salad of lamb noodles and peanuts

Delight in a fusion of flavors with this tasty salad of tender lamb, hearty noodles, and crunchy peanuts. Perfect balance of savory and nutty notes.

Ingredients:

  • 180g dry cellophane noodles
  • 1 tablespoon chili oil
  • 1 clove garlic, chopped
  • 450g tender lamb strips
  • 140g snow peas, shredded
  • 1/2 red capsicum, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1/4 cup coriander leaves
  • 1/2 cup roasted unsalted peanuts, roughly chopped

Instructions:

  1. Place glass noodles in a bowl and pour boiling water over them. Let them sit for 4 minutes or until they soften; then, drain them. Warm up the spicy oil in a wok or skillet over high heat. Put in the minced garlic and cook for half a minute. Introduce the ground lamb and stir-fry for 3 minutes or until it browns. Toss in the sugar snap peas and bell pepper and stir-fry for another 2 minutes. Next, pour in the soy sauce and tangy sweet chili sauce before taking the wok off the heat. Mix the stir-fry with the noodles, cilantro leaves, and peanuts. Transfer to plates and garnish with lime wedges before serving.
