Salad nicoise

Ingredients:
- 450g baby red potatoes, whole or halved if bigger than bite-size
- 1 tablespoon kosher salt, plus more for seasoning
- 450g green beans or haricots verts, trimmed
- 1 head Bibb lettuce, leaves separated
- 1 cup cherry or grape tomatoes, halved
- 4 hard-boiled eggs, quartered
- 1/2 cup pitted nicoise olives (or your favorite olives!)
- One 8-ounce jar high-quality tuna packed in olive oil, drained
- 1/4 cup red or white wine vinegar
- 3 tablespoons Dijon mustard
- Freshly ground black pepper
- 3/4 cup extra-virgin olive oil
- Crusty French bread, for serving, optional
Instructions:
- Place the potatoes in a large pot with cold water and add 1 tablespoon of salt. Bring it to a boil and cook until the potatoes are nearly soft, which usually takes around 10 to 12 minutes. Transfer the potatoes to a bowl and keep them aside for later.
- While the potatoes are cooking, boil water in a medium-sized pot. Prepare a large bowl of ice water and line a baking sheet with a paper towel or kitchen cloth. Season the boiling water generously with salt. Add the green beans and cook for about 2 to 3 minutes. Use a spider or a colander to remove the green beans and place them in the ice water. Once they are cool, transfer the green beans to the lined baking sheet and pat them dry.
- Arrange the Bibb lettuce, potatoes, grape tomatoes, green beans, eggs, olives, and tuna on a large platter or shallow bowl.
- In a small bowl or measuring cup, mix together the vinegar, Dijon mustard, salt, and pepper. Gradually add the oil while whisking until everything is well combined and forms an emulsion. Drizzle approximately half of the dressing over the salad, saving the rest for later. You can serve the salad with some crusty French bread if desired.
