Saag paneer salad

Ingredients:
- 1 pint cherry tomatoes
- 1 bunch bietola or spinach
- 2 tablespoons fresh lemon juice
- 1 jalapeno
- 1 inch ginger root
- 1 clove garlic
- 90g paneer cheese
- 1 green onion, large outer leaves removed
- 1/4 cup neutral oil such as grape seed
- 1 teaspoon black mustard seeds
- 1 teaspoon fenugreek
- 1/2 teaspoon cumin seeds
- 1 teaspoon garam masala
- salt
- freshly ground black pepper
Instructions:
- Start by cleaning the Swiss chard or spinach, cutting the leaves into thin strips, and removing the stems. Rinse and cut the cherry tomatoes in half. Combine the vegetables with lemon juice, salt, and freshly ground black pepper in a large mixing bowl.
- Remove the seeds from the jalapeno. Peel the ginger and garlic. Finely chop all three ingredients (you can use a food processor or knife). Dice the paneer cheese into small cubes. Cut the white and tender green parts of the scallion into thin rings.
- Just before serving the salad, heat oil in a pan over medium-high heat. Once the oil is hot, add mustard seeds, fenugreek, and cumin seeds, allowing them to sizzle for a minute. Mix in the jalapeno, ginger, and garlic mixture and cook for a minute. Add the paneer cubes and a pinch of salt, sauté for a minute. Add the scallions and cook for another minute. Sprinkle garam masala and cook for a final minute until the cheese is well coated with the spices and the oil is aromatic.
- Drizzle the spiced cheese cubes and oil mixture over the greens and tomatoes. Toss gently and serve.
