Rotisserie chicken salad with charred scallion dressing

Ingredients:
- ounces country-style bread, crusts removed, torn into 1-inch pieces
- tablespoons extra-virgin olive oil, divided
- scallions
- Kosher salt, freshly ground pepper
- tablespoons fresh lemon juice
- tablespoons unseasoned rice vinegar
- tablespoon Dijon mustard
- tablespoon mayonnaise, preferably Hellmann’s (Best Foods)
- small rotisserie chicken, meat pulled from bones and shredded
- radishes, trimmed, cut into wedges
- head of Bibb lettuce, leaves separated
- avocado, sliced, divided
Instructions:
- Preheat the oven to 450°F. Mix bread with 3 tablespoons of oil on a baking sheet with edges; add salt and pepper for seasoning. Bake until golden brown and crispy on the edges, approximately 8-12 minutes. Allow the croutons to cool down.
- While the croutons are baking, separate the white parts of the scallions from the green parts. Finely chop the white parts and place them in a large bowl. Chop the green parts finely as well. Heat 1 tablespoon of oil in a small skillet over medium heat. Cook the green parts until they are slightly blackened and crispy, which should take about 3 minutes. Transfer them to the bowl with the white parts. Add lemon juice, vinegar, mustard, and mayonnaise to the bowl and whisk everything together. Season with salt and pepper. Slowly incorporate the rest of the 6 tablespoons of oil into the mixture.
- Put half of the dressing into a separate small bowl and keep it aside. Add chicken, radishes, and croutons to the bowl with the remaining dressing and mix well.
- Place the lettuce and half of the avocado on a serving platter; season with salt and pepper. Drizzle with 3 tablespoons of the reserved dressing. Top with the chicken salad. Arrange the remaining avocado pieces around the salad and season them with salt and pepper. Drizzle the remaining dressing over the salad.
