Rotisserie chicken salad with charred scallion dressing

Ingredients:

  • 140g country-style bread, crusts removed, torn into 1" pieces
  • 10 tablespoons olive oil, divided
  • 2 scallions
  • Kosher salt, freshly ground pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoons Dijon mustard
  • 1 tablespoons mayonnaise, preferably Hellmann’s (Best Foods)
  • 1 small rotisserie chicken, meat pulled from bones and shredded
  • 6 radishes, trimmed, cut into wedges
  • 1 head of Bibb lettuce, leaves separated
  • 1 avocado, sliced, divided

Instructions:

  1. Preheat the oven to 450°F. Combine bread and 3 tablespoons of oil on a baking sheet with edges; season with salt and pepper. Bake until the bread turns golden and crisp on the edges, which should take around 8 to 12 minutes. Allow the croutons to cool down.
  2. While the bread is baking, separate the white and green parts of the scallions. Finely chop the white parts and place them in a large bowl. Finely chop the green parts. Heat 1 tablespoon of oil in a small skillet over medium heat. Cook the green parts until they become browned and crispy around the edges, which should take about 3 minutes. Add them to the bowl with the white parts. Then, whisk in lemon juice, vinegar, mustard, and mayonnaise; season with salt and pepper. Slowly mix in the remaining 6 tablespoons of oil.
  3. Transfer half of the dressing to a small bowl and set it aside. Add chicken, radishes, and croutons to the bowl with the remaining dressing and mix well to coat all ingredients.
  4. On a serving platter, arrange the lettuce and half of the avocado; season with salt and pepper. Drizzle with 3 tablespoons of the reserved dressing. Arrange the chicken salad on top. Place the remaining avocado around the salad; season with salt and pepper. Drizzle with the rest of the reserved dressing.
