Root vegetable & greens salad with red pepper jelly vinaigrette

Indulge in a delightful root vegetable & greens salad topped with a zesty red pepper jelly vinaigrette. A medley of flavors awaits!

Ingredients:

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons red pepper jelly
  • 2 tablespoons lemon juice
  • 1 tablespoon finely chopped shallot
  • 1 teaspoon whole-grain mustard
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 5-ounce package mixed salad greens
  • 2 small carrots, shaved into ribbons with a vegetable peeler
  • 1 small red beet, peeled and cut into matchsticks
  • ¼ cup pickled red onion, store-bought or homemade (see Tip)
  • ¼ cup unsalted shelled pistachios, toasted and chopped

Instructions:

  1. Combine oil, jelly, lemon juice, shallot, mustard, salt and pepper in a spacious bowl and mix well. Carefully mix in greens, carrots, beet, onion and pistachios until evenly coated.
