Root vegetable & greens salad with red pepper jelly vinaigrette
Indulge in a delightful root vegetable & greens salad topped with a zesty red pepper jelly vinaigrette. A medley of flavors awaits!
Ingredients:
- ¼ cup extra-virgin olive oil
- 3 tablespoons red pepper jelly
- 2 tablespoons lemon juice
- 1 tablespoon finely chopped shallot
- 1 teaspoon whole-grain mustard
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- 1 5-ounce package mixed salad greens
- 2 small carrots, shaved into ribbons with a vegetable peeler
- 1 small red beet, peeled and cut into matchsticks
- ¼ cup pickled red onion, store-bought or homemade (see Tip)
- ¼ cup unsalted shelled pistachios, toasted and chopped
Instructions:
- Combine oil, jelly, lemon juice, shallot, mustard, salt and pepper in a spacious bowl and mix well. Carefully mix in greens, carrots, beet, onion and pistachios until evenly coated.
