Romaine salad with parmesan crisps

Ingredients:
- 1 cup shredded Parmesan cheese
- 1/2 cup pine nuts
- 1 head romaine lettuce, chopped
- 1 pint grape tomatoes, halved
- 6 radishes, cut into quarters
- 3 to 4 tablespoons extra-virgin olive oil
- 2 tablespoons white balsamic vinegar
- Kosher salt and ground black pepper
Instructions:
- Heat the oven to 180 °C. Arrange the Parmesan cheese in an even layer on a silicone baking mat or a baking sheet lined with parchment paper. Cook until the cheese becomes crispy and turns a golden color, typically around 10 minutes. Allow it to cool down before breaking it into large pieces.
- At the same time, cook the pine nuts in a pan over high heat, stirring occasionally, until they develop a golden hue, which takes around 3 to 5 minutes.
- Combine the romaine lettuce, tomatoes, radishes, toasted pine nuts, olive oil, vinegar, salt, and pepper in a large bowl. Sprinkle the Parmesan cheese crisps on top before serving.
