Romaine salad with orange & radish

Fresh Romaine salad with zesty orange slices and crispy radish, bringing a burst of citrus and peppery flavor to each bite.

Ingredients:

  • 2 small heads romaine lettuce, washed and torn into bite-size pieces
  • 3 large navel oranges, divided
  • 1 bunch radishes
  • 5 tablespoons extra-virgin olive oil
  • 1 ½ tablespoons red-wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ¼ cup pomegranate arils (seeds)

Instructions:

  1. In a large salad bowl, place the romaine. Prepare 2 oranges by removing the peel and white pith. Cut each segment from the membranes using a small sharp knife and add them to the bowl. Rinse the radishes; keep 3 or 4 aside and slice the rest into rounds for the salad bowl.
  2. Take the other half of the orange and extract its juice into a small bowl. Combine the juice with oil, vinegar, salt, and pepper. Grate the reserved radishes over the salad, add pomegranate arils, pour the dressing over the salad, and mix well.
