Romaine salad with avocado fans

Enjoy a refreshing blend of crisp romaine lettuce paired with perfectly ripe avocado fans. This vibrant salad is a harmonious symphony of flavors and textures.

Ingredients:

  • 1/4 cup canola oil
  • 1 shallot, minced
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper
  • 2 avocados, halved, pit and peel removed
  • 1 romaine lettuce, sliced into fine ribbons

Instructions:

  1. Combine oil, shallot, lemon juice, salt, and pepper in a small bowl. Set aside
  2. Slice the avocado thinly while keeping the shape of the avocado half. Use your fingers to delicately fan out the slices.
  3. Right before serving, mix the lettuce with the dressing and place the sliced avocados on top in a fanned-out position.
