Romaine salad with avocado fans

Ingredients:
- 1/4 cup canola oil
- 1 shallot, minced
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper
- 2 avocados, halved, pit and peel removed
- 1 romaine lettuce, sliced into fine ribbons
Instructions:
- Combine oil, shallot, lemon juice, salt, and pepper in a small bowl. Set aside
- Slice the avocado thinly while keeping the shape of the avocado half. Use your fingers to delicately fan out the slices.
- Right before serving, mix the lettuce with the dressing and place the sliced avocados on top in a fanned-out position.
