Roasted tenderloin and cherry tomatoes with spicy crab salad

Ingredients:
- 910g center-cut beef tenderloin
- Extra-virgin olive oil
- Salt and freshly ground black pepper
- 1 pint yellow cherry or grape tomatoes
- 1 bunch arugula, trimmed
- 1 recipe Spicy Crab Salad, recipe follows
- 1 pint lump crabmeat, picked through
- 1/4 cup mayonnaise
- 1 tablespoon chili paste (such as sambal)
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 lime, juiced
- Salt and freshly ground black pepper
Instructions:
- Heat the oven to 200 °C.
- Secure the tenderloin with kitchen twine at 3 to 4 spots around it to help maintain its shape. Place a medium-sized cast iron or oven-safe skillet on medium-high heat and let it heat up. Drizzle in a bit of oil. Season the tenderloin with salt and pepper all over and sear it in the hot skillet, flipping it, until nicely browned. Then transfer the skillet to the oven and bake until the beef's internal temperature reaches 50 °C on an instant-read thermometer, approximately 20 minutes. Transfer the beef to a serving platter and allow it to rest for 10 minutes.
- Switch the oven setting to broil. Combine the tomatoes on a baking sheet with salt, pepper, and a drizzle of oil. Place the sheet under the broiler and broil until the tomatoes burst, approximately 5 minutes. Transfer them to a bowl and season them again with a drizzle of oil, salt, and pepper. Add the arugula and mix well.
- For serving, remove the kitchen twine from the tenderloin and slice it. Arrange the slices nicely on a serving plate. Spread the crab salad over the meat and scatter the burst tomatoes and arugula on top. Serve while warm.
- Mix the crabmeat with mayonnaise, chili paste, cilantro, and lime juice in a bowl, and season with salt and pepper.
