Roasted sweet potato quinoa salad

Ingredients:

  • 1 cup Cooked Quinoa
  • 2 handfuls Baby Spinach
  • 1 cup Roasted Sweet Potatoes
  • 1 tablespoon Cinnamon
  • 4 drops Balsamic Vinigarette
  • 1/2 cup White Onion

Instructions:

  1. Cut a couple of sweet potatoes into small pieces and place them on a baking tray with a drizzle of olive oil, some salt, pepper, and cinnamon. Bake in the oven for about 20-25 minutes at 200 °C. Prepare 1 cup of quinoa according to the instructions, transfer to a bowl, and let it cool. Finely dice half of a red onion. Once the sweet potatoes are cooked, combine all the ingredients in a large bowl, adding 2 generous handfuls of baby spinach. Drizzle with olive oil and mix well. Refrigerate for a couple of hours before serving. Enjoy your meal!
