Roasted purple cauliflower and arugula salad

Indulge in the exquisite flavors of roasted purple cauliflower paired with fresh arugula in this delightful and flavorful salad. Perfect for any occasion!

Ingredients:

  • 1 medium head purple cauliflower, broken into florets
  • 1 tablespoon olive oil
  • several shakes of salt and black pepper
  • 6-200g fresh arugula
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons sherry vinegar
  • 2 teaspoons grainy/spicy mustard
  • 1 teaspoon lemon zest (about half of 1 lemon)
  • 1 teaspoon lemon juice
  • 2 teaspoons finely chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Heat the oven to 190 °C. Arrange the cauliflower in a big baking dish. Pour 1 tablespoon of olive oil and add some salt and pepper on top. Mix everything until the cauliflower is covered. Bake for about 30 minutes until it turns slightly brown and crispy.
  2. Mix all the dressing ingredients in a small bowl.
  3. In a large bowl, put the arugula. Add the dressing and mix. Then, add the roasted cauliflower and mix everything together. Serve the dish while it's warm.
