Roasted grape and feta salad

Ingredients:

  • 1 ½ cups seedless red grapes
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ cup chopped toasted walnuts
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 90g arugula
  • 30g crumbled feta cheese (about 1/4 cup)

Instructions:

  1. Heat the oven to 450°. Mix grapes, 2 teaspoons of olive oil, and vinegar on a baking sheet lined with foil. Cook at 450° for 10 minutes; allow to sit for 5 minutes. Put the grapes, walnuts, lemon juice, 1 teaspoon of olive oil, salt, pepper, and arugula in a big bowl; mix. Sprinkle with crumbled feta cheese.
