Roasted cauliflower & avocado salad for new parents

Ingredients:
- 1 small head of cauliflower, cut into florets
- 1/4 cup extra-virgin olive oil, divided
- 1/2 cup whole-milk Greek yogurt, divided

- Salt and freshly ground pepper
- 1 ripe avocado, cubed
- 90g feta cheese, crumbled
Instructions:
- Preheat the oven to 400ºF. Place the cauliflower on a baking sheet and evenly spread 2 tablespoons of olive oil over it. Avoid adding salt at this stage, as it is not recommended for infants; you can add it later. Bake for approximately 25 minutes, turning the cauliflower halfway through, until it turns golden brown and becomes tender.
- In a bowl, mix together 6 tablespoons of yogurt, 2 tablespoons of olive oil, the finely chopped herbs, and 2 tablespoons of water. Season the dressing with salt and pepper according to your taste preferences, and adjust the consistency by adding more water if necessary. Set aside some yogurt for your little one to taste later on.
- To put together the salad, arrange the roasted cauliflower on a serving platter, layer it with slices of avocado and crumbled feta cheese, and season generously with salt and pepper. Drizzle the yogurt dressing over the salad and garnish with additional herbs.
