Roasted brussels sprouts and apple salad

Ingredients:

  • cups brussels sprouts, trimmed, halved
  • tablespoons olive oil, divided, plus more for drizzling
  • Kosher salt and freshly ground black pepper
  • apple, cored, thinly sliced
  • ounces feta, crumbled
  • tablespoons torn fresh mint leaves
  • tablespoon capers, drained
  • tablespoon (or more) fresh lemon juice

Instructions:

  1. Heat oven to 425°. Put brussels sprouts on a baking sheet with edges; pour 1 tablespoon of oil on top. Add salt and pepper for taste. Bake, stirring every so often, until they turn golden brown and crunchy, for about 15 to 20 minutes. Allow them to cool down.
  2. Mix the baked brussels sprouts with the remaining 1 tablespoon of oil, apple, feta cheese, fresh mint, capers, and lemon juice in a medium-sized bowl. Season with salt, pepper, and more lemon juice to your liking. Add a bit more oil before serving, if preferred.
