Roasted broccoli salad with bacon dressing

Ingredients:
- 6 cups broccoli florets, cut into 1-inch pieces (about 2 heads)
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 4 pieces thick-cut bacon, cut into small 1-inch strips
- 1/2 small red onion, diced (about 1/3 cup)
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/2 cup toasted walnuts, coarsely chopped
Instructions:
- Preheat your oven to 200 °C.
- Mix the broccoli with the oil and season generously with salt and pepper. Arrange the broccoli in a single layer on a baking sheet. Cook until the edges of the florets start to brown slightly and the stems are a bit tender, for about 15 to 20 minutes.
- Meanwhile, place the bacon in a small frying pan over medium heat. Cook, stirring occasionally until the fat is released and the bacon turns nearly crispy, approximately 5 minutes. Add the onion to the pan and cook until it softens a bit, for 2 to 3 minutes. Put in the vinegar and sugar, stir until the sugar dissolves, about 1 minute.
- Transfer the roasted broccoli to a large bowl and drizzle the bacon dressing over it. Add the walnuts, mix well to coat. Serve while warm or at room temperature.
