Roasted broccoli salad

Ingredients:
- 1/4 cup olive oil
- 2 bunches broccoli, florets separated
- 1 small red onion, halved and thinly sliced
- Kosher salt and freshly ground black pepper
- 4 slices thick-cut bacon
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 3 tablespoons whole milk
- 1 teaspoon granulated sugar
- 1 teaspoon paprika
- 3 tablespoons chopped fresh parsley
Instructions:
- Preheat the oven to 220 °C.
- Combine the olive oil, broccoli florets, red onion, 1 teaspoon salt, and 1 teaspoon pepper in a medium bowl. Spread the mixture on a baking sheet and bake, flipping halfway through, until the broccoli becomes crispy on the edges, for about 18 to 20 minutes. Allow it to cool, then transfer to a serving bowl.
- In the meantime, fry the bacon in a medium skillet over medium-high heat until it becomes crispy, takes around 12 to 14 minutes. Dice the bacon and keep it aside.
- To prepare the dressing, mix together the sour cream, mayonnaise, and milk in a small bowl. Season the mixture with sugar, paprika, 1 tablespoon of chopped parsley, 2 teaspoons salt, and a pinch of pepper.
- Combine the bacon and 1 tablespoon of parsley with the broccoli. Pour in the dressing gradually to coat the salad, then toss until everything is well combined. Sprinkle the remaining chopped parsley on top for garnish.
- For advance preparation, put together the salad, cover it, and store in the refrigerator.
