Roasted asparagus pasta salad

Ingredients:

  • 450g bowtie pasta
  • 450g asparagus, ends trimmed
  • Olive oil, for drizzling
  • Kosher salt and freshly ground black pepper
  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons Dijon mustard
  • Zest and juice of 1/2 lemon
  • 1/4 teaspoon crushed red pepper flakes
  • 4 tablespoons olive oil
  • 1/4 cup thinly sliced fresh chives
  • 1 (4-ounce) container crumbled goat cheese

Instructions:

  1. Preheat the oven to 220 °C.
  2. Cook pasta in a large pot of boiling salted water until it is cooked but still slightly firm. Drain in a colander and allow it to come to room temperature.
  3. While the pasta is cooking, cut the asparagus at an angle into pieces that are half an inch thick. Spread the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Place in the preheated oven and bake for 10 minutes until it is slightly tender. Take it out of the oven and let it cool down.
  4. In a small bowl, mix together shallot, garlic, mustard, lemon zest, lemon juice, and red pepper flakes. Beat in olive oil and season with salt and pepper. Add chives to the mixture.
  5. Combine the cooked pasta and roasted asparagus in a large bowl. Pour the dressing over it and mix well. Add the crumbled goat cheese, mix again, and serve.
