Roasted artichoke and marinated white bean salad
Delight in the harmonious blend of roasted artichokes and marinated white beans. This culinary masterpiece offers a perfect balance of flavors and textures.
Ingredients:
- 2 cans artichoke hearts, rinsed and patted dry
- 6 tablespoons olive oil, divided
- 1.5 teaspoons salt, divided
- 1 can white beans, drained and rinsed
- 1 small shallot, minced
- 1 garlic clove, minced
- 2 tablespoons sherry vinegar
- 1 cup chopped herbs (I used a mix of parsley, rosemary, thyme and mint)
- 1/4 teaspoon red pepper flakes
Instructions:
- Preheat the oven to 200 °C
- In a large mixing bowl, mix together shallots, garlic, and sherry vinegar. Set it aside as you prepare the artichokes.
- Pour 2 tablespoons of olive oil over the artichokes and sprinkle them with 1 teaspoon of salt. Stir well to coat the artichokes and then spread them out on a large baking sheet.
- Bake the artichokes in the oven for 20-25 minutes, or until they reduce in size slightly and begin to turn golden brown.
- While the artichokes are baking, add 1/4 cup of olive oil to the shallot mixture and whisk until well combined.
- Combine beans, herbs, 1/2 teaspoon of salt, and 1/4 teaspoon of red pepper flakes (if desired) into the mixture. Stir everything together and let it sit and absorb the flavors while the artichokes are cooking.
- Once the artichokes are ready, mix them with the marinated bean mixture. Taste the dish and adjust the seasoning to your preference.
- Serve the dish either warm or at room temperature.
