Roast radish, new potato & peppered mackerel salad

Delight your taste buds with a savory Roast Radish, New Potato & Peppered Mackerel Salad bursting with flavors. Perfect for a nutritious meal!

Ingredients:

  • 2 x 200g bags radishes
  • 500g baby new potatoes, halved (or quartered if large)
  • 5 tbsp olive oil
  • 3 tbsp Greek-style yogurt
  • juice 0.5 lemon
  • 1 small garlic clove, crushed
  • ½ small pack dill, most finely chopped, a few fronds reserved to garnish
  • 2 bags lamb's lettuces (about 140g)
  • 300g pack smoked peppered mackerel fillets, skin removed, broken up into large flakes

Instructions:

  1. Preheat the oven to 220C/200C fan/gas 7. Place the radishes and potatoes in a shallow roasting dish. Drizzle with 2 tablespoons of olive oil and add salt and pepper. Roast in the oven for 30 minutes, stirring halfway, until soft and golden brown.
  2. While the vegetables are roasting, prepare the dressing. Combine the remaining olive oil, yogurt, lemon juice, minced garlic, chopped dill, and seasonings. It might separate slightly, so give it a good whisk before serving.
  3. Take the roasted vegetables out of the oven and let them cool for 5 minutes. Mix the lettuce with the prepared dressing, then arrange the vegetables and fish on top. Garnish with the remaining dill leaves and serve.
