Rice salad with tuna, capers, and herbs

Delight in a flavorful combination of rice, savory tuna, tangy capers, and aromatic herbs in this refreshing salad. Perfect for a light and satisfying meal.

Ingredients:

  • two 4-ounce pieces fresh tuna
  • olive oil, as needed
  • 2 cup cooked rice
  • 1/4 cup fresh lemon juice or white-wine vinegar
  • 2 green onions, thinly sliced
  • 2 tablespoon capers, drained
  • 1/2 cup chopped flat-leaf parsley
  • 1/2 cup chopped basil, plus whole leaves for garnish
  • sea salt and pepper, to taste

Instructions:

  1. Take each portion of tuna and lightly coat with olive oil, then sprinkle salt and pepper on both sides.
  2. Heat up a tablespoon of olive oil in a spacious frying pan over medium-high heat. Cook the tuna on each side until it reaches medium-rare consistency, which should take around 2 minutes per side. Take off the heat and transfer to a sanitized cutting board. Once it has cooled down a bit, slice into small chunks.
  3. Place the tuna, rice, lemon juice or white-wine vinegar, capers, green onions, parsley, basil into a generous serving bowl and mix well. Season with salt and pepper according to your preference, drizzle some olive oil on top. Decorate with fresh herbs before serving.
