Rice salad with tuna, capers, and herbs

Ingredients:
- two 4-ounce pieces fresh tuna
- olive oil, as needed
- 2 cup cooked rice
- 1/4 cup fresh lemon juice or white-wine vinegar
- 2 green onions, thinly sliced
- 2 tablespoon capers, drained
- 1/2 cup chopped flat-leaf parsley
- 1/2 cup chopped basil, plus whole leaves for garnish
- sea salt and pepper, to taste
Instructions:
- Take each portion of tuna and lightly coat with olive oil, then sprinkle salt and pepper on both sides.
- Heat up a tablespoon of olive oil in a spacious frying pan over medium-high heat. Cook the tuna on each side until it reaches medium-rare consistency, which should take around 2 minutes per side. Take off the heat and transfer to a sanitized cutting board. Once it has cooled down a bit, slice into small chunks.
- Place the tuna, rice, lemon juice or white-wine vinegar, capers, green onions, parsley, basil into a generous serving bowl and mix well. Season with salt and pepper according to your preference, drizzle some olive oil on top. Decorate with fresh herbs before serving.
