Ribboned courgette salad

Delight in the freshness of ribboned courgettes tossed with vibrant herbs and zesty dressings for a satisfying burst of flavor in every bite.

Ingredients:

  • 10g parsley, finely chopped
  • 1 lemon, zested and juiced
  • 1 tbsp olive oil
  • ½ tbsp honey
  • 2 courgettes
  • 400g can chickpeas, drained and rinsed
  • ½ x 198g can sweetcorn, drained
  • 80g feta (check it’s vegetarian, if needed)
  • 2 tsp mixed seeds
  • 2 spring onions, finely chopped

Instructions:

  1. Combine most of the parsley, lemon zest, lemon juice, olive oil, and honey in a bowl. Whisk thoroughly and add seasoning to your liking.
  2. Use a vegetable peeler to create ribbons from the courgettes, making sure to discard the seedy center. Place the ribbons in a large bowl along with the chickpeas and sweetcorn. Pour the dressing over the mixture, toss gently, and allow it to marinate for 5 minutes. Crumble the feta cheese on top and lightly toss again. Season with a sprinkle of black pepper.
  3. Distribute the salad evenly onto four plates. Finish by garnishing with the remaining parsley, mixed seeds, and spring onions.
