Rejuvenating balinese green apple salad

Ingredients:

  • 2/3 cup freshly squeezed lime juice (from about 6 small limes)
  • 2 teaspoons sugar
  • 2 teaspoons fish sauce
  • 2 teaspoons water
  • 4 red Thai bird chillies, sliced into thin rings
  • 2 Granny Smith apples
  • 1/2 small red onion
  • 3 tablespoons shelled, roasted peanuts

Instructions:

  1. Prepare the marinade in advance to allow the flavors to blend. Mix the initial four marinade components in a bowl and mix thoroughly. Incorporate the sliced chilies and let it sit.
  2. Cut the onions into thin slices and keep aside.
  3. Crush the peanuts. I recommend using a mortar and pestle for this task. Alternatively, place the peanuts in a ziplock bag, seal it, and crush them coarsely by rolling with a rolling pin.
  4. Remove the core from the green apples and cut them into thin strips, then immediately mix them with the marinade to prevent discoloration.
