Rejuvenating balinese green apple salad

Ingredients:
- 2/3 cup freshly squeezed lime juice (from about 6 small limes)
- 2 teaspoons sugar
- 2 teaspoons fish sauce
- 2 teaspoons water
- 4 red Thai bird chillies, sliced into thin rings
- 2 Granny Smith apples
- 1/2 small red onion
- 3 tablespoons shelled, roasted peanuts
Instructions:
- Prepare the marinade in advance to allow the flavors to blend. Mix the initial four marinade components in a bowl and mix thoroughly. Incorporate the sliced chilies and let it sit.
- Cut the onions into thin slices and keep aside.
- Crush the peanuts. I recommend using a mortar and pestle for this task. Alternatively, place the peanuts in a ziplock bag, seal it, and crush them coarsely by rolling with a rolling pin.
- Remove the core from the green apples and cut them into thin strips, then immediately mix them with the marinade to prevent discoloration.
- Just prior to serving, sprinkle the crushed peanuts over the dish.
