Refried bean and cheese melts

Ingredients:

  • 2 demi-baguettes or large hoagie rolls, split
  • 1 clove garlic, halved
  • 2 tablespoons unsalted butter, softened
  • 1 15.4-oz can refried beans, warmed
  • 170g Manchego cheese, grated (about 1.75 cups)
  • Pico de gallo, for serving
  • Dressed salad greens, for serving

Instructions:

  1. Preheat the broiler, positioning the rack 6 inches away from the heat source. Place the bread halves on a baking sheet lined with aluminum foil, cut sides facing up.
  2. Broil for 2 to 3 minutes until the bread turns golden brown. Make sure to keep a close eye on it to prevent burning. Take it out of the oven.
  3. Gently rub the cut sides of the bread with the cut sides of garlic halves, then discard the garlic pieces. Spread butter onto the bread, followed by a layer of beans, and top it off with cheese.
  4. Place the baking sheet back into the oven and broil until the cheese becomes bubbly and golden, approximately 3 minutes. Slice the bread at an angle and serve with pico de gallo and greens.
