Refried bean and cheese melts

Ingredients:
- 2 demi-baguettes or large hoagie rolls, split
- 1 clove garlic, halved
- 2 tablespoons unsalted butter, softened
- 1 15.4-oz can refried beans, warmed
- 170g Manchego cheese, grated (about 1.75 cups)
- Pico de gallo, for serving
- Dressed salad greens, for serving
Instructions:
- Preheat the broiler, positioning the rack 6 inches away from the heat source. Place the bread halves on a baking sheet lined with aluminum foil, cut sides facing up.
- Broil for 2 to 3 minutes until the bread turns golden brown. Make sure to keep a close eye on it to prevent burning. Take it out of the oven.
- Gently rub the cut sides of the bread with the cut sides of garlic halves, then discard the garlic pieces. Spread butter onto the bread, followed by a layer of beans, and top it off with cheese.
- Place the baking sheet back into the oven and broil until the cheese becomes bubbly and golden, approximately 3 minutes. Slice the bread at an angle and serve with pico de gallo and greens.
