Red & white potato salad with pickled onions

Indulge in a delicious red and white potato salad featuring zesty pickled onions. A harmonious blend of flavors awaits in every bite.

Ingredients:

  • 1 ¼kg red Roseval new potatoes
  • 1 large red onion, halved and cut into thin half-moons
  • 100ml white wine vinegar
  • 150ml soured cream
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 celery stalks, finely diced
  • 1 gherkin from a jar, finely chopped
  • 2 tbsp dill, chopped

Instructions:

  1. Place the potatoes in a saucepan filled with cold water and salt, then heat until boiling. Let them simmer for about 15 minutes or until they are soft and a knife can easily pierce through them. At the same time, mix the onion and vinegar in a large bowl, cover it, and leave it aside.
  2. Once the potatoes are cooked, drain them and put them back in the pan. Let them sit for 5 minutes to allow excess steam to escape. Cut them into small pieces and add them to the bowl with the onion and vinegar. Season with salt, mix well, cover the bowl, and refrigerate until cold.
  3. Mix together the sour cream, mayonnaise, and mustard. Add this mixture to the cooled potatoes along with the celery, gherkin, and dill. Gently stir everything with a spatula until well incorporated, being careful not to break the potatoes. Adjust the seasoning as needed, then refrigerate for at least 1 hour before serving.
