Red, white & blue potato salad

Ingredients:
- Nonstick cooking spray
- 450g tiny new red potatoes, scrubbed
- 1 ½ teaspoons olive oil
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
Instructions:
- Heat up the oven to 220 °C. Cover a baking pan sized 15x10x1 inches with aluminum foil and spray it lightly with cooking spray. Keep it aside. Cut larger potatoes in half.
- Mix potatoes in a big bowl with oil, kosher salt, and pepper. Place potatoes in one layer in the baking pan. Bake for 25 to 30 minutes until the outer part of potatoes becomes lightly brown and crispy while the inside is soft, stir the potatoes once during baking.
