Red rice salad with peaches & cucumber

Ingredients:
- 1 tablespoon white-wine vinegar
- 1 teaspoon grated lemon zest
- 1 tablespoon lemon juice
- ¾ teaspoon salt
- 3 tablespoons extra-virgin olive oil
- 1 English cucumber, cut into 1-inch pieces
- 450g tomatoes, cut into 1-inch pieces
- 2 tablespoons chopped shallot
- 2 tablespoons chopped fresh flat-leaf parsley or basil
Instructions:
- In a spacious bowl, blend together vinegar, lemon zest, lemon juice, and salt using a whisk. Gradually pour in oil while whisking to merge the ingredients.
