Red rice salad with peaches & cucumber

Ingredients:

  • 1 tablespoon white-wine vinegar
  • 1 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • ¾ teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 1 English cucumber, cut into 1-inch pieces
  • 450g tomatoes, cut into 1-inch pieces
  • 2 tablespoons chopped shallot
  • 2 tablespoons chopped fresh flat-leaf parsley or basil

Instructions:

  1. In a spacious bowl, blend together vinegar, lemon zest, lemon juice, and salt using a whisk. Gradually pour in oil while whisking to merge the ingredients. Mix in cucumber, tomatoes, and shallot, and gently mix everything together. Leave the mixture at room temperature for a minimum of 1 hour or a maximum of 2 hours before serving.
