Ingredients:
- 1 tablespoon whole-grain mustard
- 2 tablespoons Champagne vinegar
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 2 oranges
- 1 Persian cucumber, sliced
- 1 bulb fennel, halved and thinly shaved
- 1 small head radicchio, quartered and thinly sliced
- 1 cup red rice, cooked according to package directions and cooled (about 2 cups)
- 1/4 cup fresh basil leaves, torn
Instructions:
- Combine the mustard, vinegar, olive oil, and salt in a large bowl.
- Peel the oranges by slicing off the top and bottom. Remove the peel and white pith by cutting from top to bottom. Separate the segments and add them to the bowl. Squeeze any remaining juice from the membranes into the bowl and discard them.
- Mix in the cucumber, fennel, radicchio, rice, and basil. Stir well to mix everything together. Cover the bowl and chill in the refrigerator for 1 hour to allow the flavors to blend. Before serving, let it sit at room temperature for 20 minutes.
