Red quinoa salad with snow peas, spinach, feta and poached egg

Ingredients:
- 1/2 cup red quinoa
- 1/2 tablespoon olive oil
- 1 handful of snow peas
- 1 egg
- 1 handful baby spinach leaves
- 50 grams feta cheese
- Sea salt, to taste
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon white wine vinegar
- 1/4 teaspoon lemon zest
- 1 small garlic clove, minced
- 1 pinch of cayenne pepper, to taste
Instructions:
- Combine the quinoa, a cup of water, and a pinch of salt in a small saucepan. Bring to a boil, then lower the heat and simmer with the lid on for about 15 minutes or until all the liquid is absorbed by the quinoa.
- Warm up some olive oil in a small skillet and cook the snow peas over high heat for 2 to 3 minutes. Aim for a slightly crispy texture while retaining some of the snap.
- Bring a small pot of water along with a pinch of salt to a boil on the stove. Crack an egg into a cup or bowl and carefully slide it into the boiling water. Let it cook for 2 minutes.
- Combine and blend all the ingredients needed for the sauce.
- In a serving dish, arrange the cooked quinoa, sautéed snow peas, fresh spinach, and poached egg. Sprinkle crumbled feta cheese on top and drizzle with the prepared sauce. Serve immediately.
