Red quinoa salad with snow peas, spinach, feta and poached egg

Ingredients:

  • 1/2 cup red quinoa
  • 1/2 tablespoon olive oil
  • 1 handful of snow peas
  • 1 egg
  • 1 handful baby spinach leaves
  • 50 grams feta cheese
  • Sea salt, to taste
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon white wine vinegar
  • 1/4 teaspoon lemon zest
  • 1 small garlic clove, minced
  • 1 pinch of cayenne pepper, to taste

Instructions:

  1. Combine the quinoa, a cup of water, and a pinch of salt in a small saucepan. Bring to a boil, then lower the heat and simmer with the lid on for about 15 minutes or until all the liquid is absorbed by the quinoa.
  2. Warm up some olive oil in a small skillet and cook the snow peas over high heat for 2 to 3 minutes. Aim for a slightly crispy texture while retaining some of the snap.
  3. Bring a small pot of water along with a pinch of salt to a boil on the stove. Crack an egg into a cup or bowl and carefully slide it into the boiling water. Let it cook for 2 minutes.
  4. Combine and blend all the ingredients needed for the sauce.
  5. In a serving dish, arrange the cooked quinoa, sautéed snow peas, fresh spinach, and poached egg. Sprinkle crumbled feta cheese on top and drizzle with the prepared sauce. Serve immediately.
