Red quinoa and mango salad with lime dressing

Ingredients:
- 2 cups organic red quinoa (cooked)
- 1 organic mango (diced)
- 1 organic avocado (diced)
- 1 organic tomato (diced)
- 1 organic jalapeno (diced)
- 1/2 - 1 cups organic cilantro (diced)
- 2 cups organic non-GMO corn
- 430g organic black beans (drained), 430g can
- 2 organic limes (freshly squeezed)
- 2 tablespoons organic extra-virgin olive oil
- 1 teaspoon organic ground cumin
- 1 teaspoon organic chili powder
- 1/2 teaspoon Himalayan pink salt
Instructions:
- Cook 2 cups of red quinoa using the method you prefer or follow the instructions on the package
- Cut the mango, avocado, tomato, onion, jalapeno, and cilantro into small pieces
- Combine the diced vegetables, black beans, and corn in a big bowl and leave aside
- Mix all the lime dressing ingredients in a small bowl and stir until they are fully blended
- Combine the cooked quinoa and lime dressing with the vegetable mix in the big bowl, stirring thoroughly until the ingredients are well mixed and the dressing is evenly spread
- If desired, decorate with extra cilantro or a squirt of lime juice.
