Red quinoa and mango salad with lime dressing

Delight in the vibrant flavors of red quinoa and sweet mango paired with zesty lime dressing. A perfect blend of textures and tastes in every bite.

Ingredients:

  • 2 cups organic red quinoa (cooked)
  • 1 organic mango (diced)
  • 1 organic avocado (diced)
  • 1 organic tomato (diced)
  • 1 organic jalapeno (diced)
  • 1/2 - 1 cups organic cilantro (diced)
  • 2 cups organic non-GMO corn
  • 430g organic black beans (drained), 430g can
  • 2 organic limes (freshly squeezed)
  • 2 tablespoons organic extra-virgin olive oil
  • 1 teaspoon organic ground cumin
  • 1 teaspoon organic chili powder
  • 1/2 teaspoon Himalayan pink salt

Instructions:

  1. Cook 2 cups of red quinoa using the method you prefer or follow the instructions on the package
  2. Cut the mango, avocado, tomato, onion, jalapeno, and cilantro into small pieces
  3. Combine the diced vegetables, black beans, and corn in a big bowl and leave aside
  4. Mix all the lime dressing ingredients in a small bowl and stir until they are fully blended
  5. Combine the cooked quinoa and lime dressing with the vegetable mix in the big bowl, stirring thoroughly until the ingredients are well mixed and the dressing is evenly spread
  6. If desired, decorate with extra cilantro or a squirt of lime juice.
