Red quinoa and garbanzo bean salad with salmon

Ingredients:
- 2 cups cooked red quinoa
- 1/2 butternut squash
- 100g sugar snaps
- 450g garbanzo beans
- 1 small red onion
- 100g haricot vert
- 1 bunch arugula
- 2 large salmon filets
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 garlic clove, smashed
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
Instructions:
- Prepare the quinoa as per the instructions on the package. Peel and dice the butternut squash. Slice the onion thinly. Wash the chickpeas with cold water. Create the dressing by mixing all the components in a small bowl and adjust the seasoning. Cook the haricot verts and sugar snaps in salted boiling water until they are al dente. Drain and rinse them under cold water. Transfer the cooked and slightly cooled quinoa to a large bowl. Drizzle the dressing over it and mix well. Incorporate the other ingredients into the quinoa. Allow it to sit and absorb the flavors of the dressing while you prepare the salmon. Season with salt and pepper to your liking.
